Lemon Balm and Coconut Thai Iced Tea

A creamy and soothing white iced tea made with white tea, fresh lemon balm, and coconut milk.

Ingredients
  

  • 1/2 cup fresh lemon balm leaves
  • 1 cup water
  • 1 cup coconut milk
  • 1 tsp Honey or sweetener of choice to taste
  • Ice cubes

Instructions
 

  • Brew the Lemon Balm Tea
  • Hot Brew Method: Bring water to a boil on the stove or in a tea kettle. Pour 1 cup of hot water over the lemon balm leaves and let steep for 5-10 minutes. Let cool.
  • Sun Tea Method: Place lemon balm leaves and 1 cup of water in a clear glass jar. Set in the sun for 2-4 hours to infuse naturally.
  • Prepare the Coconut Milk Base: Fill a serving glass with ice and pour 1 cup of coconut milk over it.
  • Strain & Mix: Strain the cooled lemon balm tea and pour 1 cup over the coconut milk. Add honey or maple syrup, if desired, and stir until fully dissolved.
  • Serve & Enjoy! Stir gently before serving and garnish with a sprig of fresh lemon balm, if desired.

Notes

Store the infused tea (before adding coconut milk) for up to 3 days in the refrigerator. Add coconut milk fresh when serving.
