Rinse the wood sorrel leaves and stems thoroughly and pat dry with a clean towel.
Roughly chop (if desired- I did not) the wood sorrel and place it in a medium saucepan.
Add the sugar and water to the saucepan and stir to combine.
Place the saucepan over medium heat and bring the mixture to a simmer.
Reduce the heat to low and let the mixture simmer for 10-15 minutes, stirring occasionally, until the sugar has completely dissolved and the wood sorrel has infused the syrup with its flavor.
Remove the saucepan from the heat and let the syrup cool to room temperature.
Strain the syrup through a fine-mesh sieve into a clean container, discarding the wood sorrel solids.
Store the wood sorrel simple syrup in an airtight container in the refrigerator for up to one month.
