Strawberry Rose Simple Syrup Using Honey
A delicious and healthier simple syrup with honey using farm fresh strawberries with a hint of delicate rose.

- 1/2 cup honey raw preferred
- 1/2 cup water
- ½ cup dry rose petals make sure they are food grade. If using fresh rose petals, use 1 cup.
- 1 pint fresh organic strawberries hulled and roughly sliced or chopped (4 cups)
In a small pot, combine the strawberries. rose, honey and water. Bring the mixture to a boil over medium heat.
Once the strawberries soften slightly, start to mash with a potato masher to get a rich simple syrup full of strawberry goodness.
Reduce the heat to low and let the mixture simmer for about 10-15 minutes or until the strawberries have broken down and released their juices.
Using a fine-mesh strainer, strain the strawberry mixture into a clean bowl or jar. Be sure to press down on the strawberries to extract as much liquid as possible for a thicker syrup.
Discard solids.
Let cool completely before use.
Transfer the strawberry syrup to a jar or container and store it in the refrigerator for up to 1 week.
