Making this homemade strawberry rose simple syrup was a fun experience for our family. I took our 1 and 3 year old to a local farm to handpick the fresh strawberries, and it was a delightful adventure. We enjoyed the beautiful weather, the sweet scent of fresh strawberries in the air, and the joy of watching the little ones excitedly fill their baskets with the bright red fruit.

Ingredients
- 1/2 cup honey (raw preferred)
- 1/2 cup water
- ½ cup dry rose petals (make sure they are food grade). If using fresh rose petals, use 1 cup.
- 1 pint fresh strawberries, hulled and roughly sliced or chopped (4 cups)
Optional Additions: lemon juice, lime juice, fresh mint
Supplies
- Small saucepan
- Tomato knife (my favorite knife to cut strawberries)
- Wooden spoon or spatula
- Fine mesh sieve or strainer
- Clean bowl or measuring cup
- Potato masher
- Jar or container with a lid for storing the syrup in the refrigerator
Instructions
- Wash and roughly chop strawberries.
2. In a small pot, combine the strawberries….

3. Once the strawberries soften slightly, start to mash with a potato masher to get a rich simple syrup full of strawberry goodness.

5. Using a fine-mesh strainer, strain the strawberry mixture into a clean bowl or jar. Be sure to press down on the strawberries to extract as much liquid as possible for a thicker syrup.
6. Discard solids.
7. Let cool completely before use.
8. Transfer the strawberry syrup to a jar or container and store it in the refrigerator for up to 1 week.

I haven’t canned this before, but I don’t see why not! I actually can using honey instead of sugar using methods from the book: Naturally Sweet Food In Jars. She usually uses pomonas pectin in her jams. The honey is a 1:1 substitute for sugar! Thanks for stopping by 🙂
